Wild caught 10-12 year old Belon Oysters from the remote bays off North East Tasmania.  These oysters are hand harvested by divers and purged before being distributed.  They are the only wild oyster fishery in the country and have a very strict quota system to protect it from becoming extinct.

This oyster is best presented on the top, flat shell due to it’s thinner but broader meat characteristic and avoid customers piercing any naturally occurring sulphur bubble in the cupped shell.
